The introduction of Notion Forms now allows you to use Notion not only to organize and share information, but now you can collect it, too.
This new functionality built into Notion allows for external audiences to submit applications or other information you need. Because this is a brand new feature in Notion, it currently lacks some of the features that the other options for Notion integration found in Zapier, Make, and a few others. However, the ease of use and all-in-one capabilities will make this a preferred option for most use cases.

And, for tracking submissions, here is the Funding database view filtered for Rising Senior Fund:
Note these are grouped by Fiscal Year and sorted by Student Last Name. Also, you can use Sum or other summary options at the bottom of number property columns.
